She didn't have molecular rearrangement when she lost her powers, she had a detachable pink streak
Actually, no, her pink hair was not detachable.
In Free Wi-Fi, Alan pulls out one of her pink hair strands and from Skylar's reaction, it caused her actual pain, indicating that those hairs are rooted in her scalp and therefore, real.
If they were truly detachable, she would have felt nothing.
Well, while this might be true, in the Season 2 Episode, Stop Bugging Me, Skylar left Mighty Med to work on a project with Alan, Gus and Oliver. Back in Mighty Med, a nurse was wearing Skylar's pink hair streak, proving it is detachable.
But what you said also has an explanation. Might be a goof from the writers.
The only logical explanation I can think of is that Skylar's streak used to be rooted in her scalp when she still had her powers, but after she lost her powers, she replaced it with an artificial, detachable one.
Also, in Season 2 of Mighty Med, after the Annihilator Arc and the Takeover of Mighty Med, Skylar Storm lost her powers. That means she wouldn't be able to alter her hair color. Consider this: Skylar Storm does have a pink streak, but her civilian cover, Connie Valentine doesn't. Since Skylar doesn't have her powers BUT Connie Valentine makes appearances, we have to accept that her pink streak is detachable.
What's to say Skylar can't use her power of molecular rearrangement on other people?
In the case you cited above, she might have used it to transform the hair of the nurse in question.
I tend to go by what I see onscreen, unless it is actually shown that Skylar is removing the pink strands in a painless manner, there is no evidence that they aren't real.
I assume Skylar retained her power of molecular rearrangement because she goes from Connie's appearance to her normal appearance too fast to explain.
I would assume that it's only limited to cosmetic changes of her physical form, that she's not a true shapeshifter.
Since she brings in an alternate bodysuit in the final episode of season 1 and they did reference that Skylar goes clothes shopping once, this suggests she can't change the appearance of her clothing.
As to how she retained this power, I speculated it was because Skylar was only drained of her superpowers, that anything categorized as Calderan basic biology was not affected.
Otherwise she wouldn't be stronger, have more endurance, resilience and high temperature tolerance.
Maybe all Calderans have the ability of molecular rearrangement as a basic power and therefore, it's not counted as a superpower.

Like they just included her because she was Oliver and Kaz's friend and had no reason to invite her besides that.
And I feel like they're turning Skylar into the "token alien freak".
From what I gathered in Mighty Med, Skylar has no external differences to a normal humanoid, which is why she was able to go to a human school and pass as an ordinary teenage girl.
The first change was that they said she has acidic saliva, which as far as I know, this was never stated in Mighty Med's episode run.
And then they claimed she has extra toes (this is an actual medical condition called Polydactyly) "eight on one foot and six on the other".
I'm not sure how they could do that, it means that Skylar would always have to wear fully enclosed shoes or boots so they don't have to attach the special effects prosthetics.
I am uncertain if it was shown or just referenced.
Plus, as a genetically engineered lifeform, it doesn't make sense that Skylar would have such an obvious deformity, if you have complete control of someone's genome, you remove the errors.
I also assume that being aware of other humanoid species, Calderans know that they must pass for normal and would make sure not to include anything to make their species stand out on other planets.
I think that was one of the complaints about Elite Force, that they keep making references to Skylar's alien nature and these changes are just the scriptwriters beating a dead horse.

Buckmana i cannot express more how much i agree! Seriously, i think Skylar deserves a little respect. She kicks bad guys' butt every day. She helps the team! But also i think the toe situation was just for comedy releif. But if this is a real medical condition, then people shouldn't be joking about it! I don't know if the writers knew this or not, but if they did, I'm wondering why they would've put that in the script!! Also, what's so wrong with being from another planet? You have to realize the Lab Rats are not used to seeing aliens, because prior to Elite Force, they thought aliens were fictional. At least Perry and Douglas don't mind that she's an alien.
Also, I knew Skylar still had some powers remaining, like acidic spit. It would've been helpful in Mighty Med, where Skylar could just chew gum, and spit it as a projectile.
Well Torresp, they've been living with each other for quite a while. I think they would've gotten used to Skylar being an alien by now.
